The Perfect Game Day Keto Appetizer

One of the hardest things about the keto lifestyle is the temptation, especially during game day.

Sure, you can plan ahead and bring compliant keto snacks, but your college buddies start cracking jokes at your expense and you think about succumbing to beer pressure. Before you know it, you've committed to a "cheat day", pounded three brewskis, and eaten a bucket of Oreos.

Not anymore.

We've created the perfect pork rind influenced appetizer that (unfortunately) even your carb-loving friends will eat.

Our secret? The two A's: avocados and air fryer.

Just make sure to double the recipe because you're gonna need seconds.



INGREDIENTS

  • 1 bag of your choice of pork rinds or chicharrones, crushed
  • 4 eggs
  • 2 avocados, firm and ripe
  • 1 tablespoon chili powder
  • 2 tablespoons onion powder
  • 2 tablespoons garlic powder
  • 2 tablespoons dried cilantro
  • 1 cup keto mayo
  • 1/4 cup sriracha

DIRECTIONS

  1. In a medium bowl, beat up the eggs like you're a bully having a bad day.
  2. Slice up the avocados into a nice dipping shape. Make sure the avocados aren't too ripe or you're going to have a bad time.
  3. Pulverize the pork rinds like you're The Hulk and divide equally into three medium sized bowls.
  4. Whisk three eggs, add all spices, and mix 'em up like it's the last day of school.
  5. In one pork rind crumb bowl, sprinkle in the chili powder and mix well. This will be the "chili-style" breading. Try these Chili Lime flavored pork rinds for this recipe!
  6. In a second pork rind crumb bowl, sprinkle in the onion powder, garlic powder, and dried cilantro. Mix well. This second bowl will be the "guac style" breading.
  7. The third, undisturbed, bowl of pork rinds will be your plain breading.
  8. With your not-so-dainty keto hands, grab an avocado slice and batter it in the egg bowl. Then dredge it in the pork rind breading mix of your choosing. Repeat until all avocado slices are fully breaded.
  9. Air fry the fries at 375 degrees for 8-10 minutes.
  10. While frying, make the dip by mixing together the mayo and ketchup until smooth.
  11. Congratulations! You've created the first keto appetizer that even your carb-worshipping friends will want to devour!
