Zero Guilt Keto Chicken Tenders

Our friend, @passthetreats, offered to share with us the secret to her gluten free chicken tendies... how could we pass up the offer?

Ever since I was a kid, I’ve been in love with chicken fingers. My parents used to joke and ask me if I was going to continue to order them off the kids menu when I started dating (the answer was yes). But gluten free chicken fingers definitely aren’t easy to find. 👎🏼

Thanks to @southernrecipesmallbatch, I can indulge in these delicious tendies any time I want! They’re gluten free, low carb and so crunchy, making them the perfect “breading”.

INGREDIENTS

DIRECTIONS

  1. Crush bag of Southern Recipe Small Batch Spicy Dill Pork Rinds.
  2. Coat chicken tenders in Dijon mustard and season them with garlic powder and pepper.
  3. Dip tenders in crushed pork rinds, making sure they’re covered and the rinds are sticking.
  4. In large pan, heat oil (I used avocado oil) over med-high heat.
  5. Pan-fry the tenders for 3 minutes on each side.
  6. Remove from pan, and place onto a paper towel covered plate to absorb excess oil.
  7. Serve with your sauce of choice and enjoy!
