INGREDIENTS

  • 3/4 cup of your choice of pork rinds, crushed (place it in a plastic bag and crush using a rolling pin)
  • 24 oz. canned pink salmon, drained
  • 1 small yellow onion, finely chopped
  • 1 egg, beaten
  • 2 tsp. Worcestershire sauce
  • 1 tsp. garlic powder (or onion powder)
  • 3 tsp. chives, chopped
  • 2 tbsp. olive oil
  • 2 tbsp. butter

DIRECTIONS

  1. In a large bowl (perhaps your favorite mixing bowl to mix in), dump in the pink salmon, onion, egg, Worcestershire sauce, garlic powder, fresh chives, and crushed pork rinds until mixed in such a state that you feel like you’ve done the best mixing job that could have ever been asked of you.
  2. Use your hands (or feet, if you feel like they’re best suited for this step) to form the salmon mixture into patties. If you're using canned salmon, to make the patties stick together, you can bread crumbs, panko, or finely crush some saltine crackers and mix them up with the eggs. But if you want to keep your salmon patties low carb and gluten-free, use almond flour instead.
  3. Heat olive oil and butter together (medium heat is preferred) in a large pan or skillet that you use when you want the food to be delicious! When the skillet is hot, add salmon patties in a single layer.
  4. You want your keto salmon recipe to be a real success, perfectly crunchy on the outside and soft inside? Fry the keto salmon cakes until golden brown and desirable. Flip patties and cook until the other side is brown too. If you prefer to air fry salmon patties, preheat your air fryer to 400F and air fry your low carb keto salmon cakes for 8-12 minutes until golden and crispy on the edges.
