INGREDIENTS

  • 2 cups of your choice of pork rinds or chicharrones, crushed
  • No sugar addedΒ Mt. Olive Pickles. Pickle slices or pickle spears. The remaining pickle juice can be used as the vinegar in a brine for chicken wings or fried chicken.
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 2 eggs
  • 1 cup of almond flour
  • Pork rinds or cracklins on the side (remember those Spicy Dill ones we mentioned earlier?)

DIRECTIONS

  1. CrushΒ 2 cups of pork rinds inside of a heavy duty resealable bag as if they were the Marcia to your Jan.*
  2. Dump those crushed pork rinds into a separate bowl and mix with these pork rind crumbs with the paprika and garlic powder. If you want your coated pickles to be spicier, you can use spicy seasonings – cajun seasoning and cayenne pepper.
  3. In another bowl, beat those two eggs with some water to make the egg wash. For a quick, easy, and incredibly tasty snack, you can also whisk the eggs with some heavy whipping cream.
  4. In yet another bowl, pour the almond flour. You can also add some grated parmesan cheese to the mix.
  5. Decide who has to do the dishes. We recommend each grabbing onto a pork rind and breaking it. The holder of the smaller piece will be today's dishwasher.
  6. Dredge your pickles in the almond flour mixture.
  7. Dip each pickle slice into the egg mixture.
  8. Coat the dill pickles, liberally or conservatively, into your pork rind mixture. One pickle spear at a time.
  9. Lay the pickle slices on the air fryer basket after you've lined it with parchment paper or baking sheet. For an extra crispy texture, you can spray the breaded pickles with avocado oil, olive oil or cooking spray before putting them into the air fryer. Air fry for 15 minutes at 375ΒΊF, until golden brown.Β As there are different air fryers on the market, cooking times can vary based on your type of fryer. For best results, read the air fryer instructions before cooking air fried pickles.

  10. Serve immediately. Then repeat steps 1-9 every time you crave for these low carb fried pickles. You will probably need to do a few batches when making multiple servings.

You're all set to make keto fried pickles like a pro!
