Keto Bacon Bites. Crispy on the outside, poppable, bacon-y, savory, creamy, fried… and yet, somehow guiltless.
Boy, oh boy, did we luck out when Mr. Keto decided to woo the world with his high protein, low carb philosophy. Without movers and shakers like him, we don’t know where we’d be. Probably standing over the kitchen sink, scarfing down boring ol’ salads, then feeding the cats and calling it a night.

Mix chopped jalapeños, cream cheese, cheddar cheese, bacon, onions, and salt in a large bowl.
Form into 1.5-inch balls. Place on a baking sheet with plenty of space in between, and chill for at least 20 min. Not you, the cream cheese balls. You can do whatever you want.
After bites are chilled, whisk eggs in a bowl, and set aside. Place crushed pork rinds in a separate bowl.
Gently coat the chilled bites with the crushed pork rinds, lightly pressing the bites into the pork rinds. Dip the coated bites in the whisked egg and add a second coating of the keto-friendly pork rinds.
DEEP FRY in your favorite oil at 350 degrees F, about 8-10 minutes or until golden brown.
Wait to cool, then serve warm… watch ‘em disappear.
