Pork Rind Crostini

Ingredients:
3 large onions, sliced
2 Tbsp. butter
2 Tbsp. brown sugar
2 Tbsp. Sherry vinegar
2 (4oz) fresh goat cheese logs (any variety)
2 Tbsp. regular honey or your favorite jam
Salt and pepper to taste
Herbs of your choice to garnish

Directions:
Arrange your pork rinds on a plate or platter to act as the base for the toppings.
Simply slice or spoon out the goat cheese in small dollops, or spread it evenly on each pork rind.
In a large sauté pan, heat one tablespoon of olive oil and the butter, over medium high heat, until the butter melts. Add the sliced onions, lower the heat to medium, and cook until translucent. Add the vinegar and the brown sugar. Cook, stirring occasionally, for about 30 to 45 minutes or until the onions caramelize.
Add a spoonful of caramelized onions on top of the goat cheese.
Finish with a drizzle of honey for a rich, sweet, and savory flavor.
