Keto Meatloaf Muffin Recipe


INGREDIENTS

  • 1 tsp olive oil
  • 1/3 cup onion, minced
  • 1/3 cup carrot, minced
  • 1/3 cup celery, minced
  • 2 tsp dried parsley, minced
  • 2 garlic cloves, minced
  • 1/3 cup keto-friendly ketchup
  • 2 tbsp mustard
  • 2 tsp Worcestershire sauce
  • 1/2 tsp pepper
  • 2 large eggs
  • 1.5 pounds ground beef
  • 1/3 cup bacon, fully cooked & crumbled
  • 1 cup Original Pork Rinds, crushed

DIRECTIONS

  1. Preheat oven to 350°F and spray muffin tin with cooking spray.
  2. Heat the olive oil in a medium skillet over medium-high heat. Add onion, carrot and celery until soft. Add dried parsley and garlic, cook for 1 more minute. Remove and set aside.
  3. In a medium mixing bowl, whisk together ketchup, Dijon mustard, Worcestershire sauce, pepper and eggs. Add sautéed onion mix. Add the meatloaf mix. Add bacon. Add bread crumbs. Toss to combine.
  4. Bake for 25-30 minutes or until internal temperature reaches 160°F. Allow to rest for 5 minutes.
  5. Top with ketchup and minced parsley.
